- 1 avocado, sliced
- 1/4 cup fresh cilantro
- 1 lime, cut into wedges
Instructions
- Preheat oven to 425°F and line a baking sheet with parchment paper.
- Toss diced potatoes with olive oil and seasonings, then spread evenly on baking sheet.
- Roast potatoes for 30-35 minutes, flipping halfway, until golden and tender.
- Heat skillet over medium heat and sauté diced onion for 2-3 minutes.
- Add minced garlic and cook for 30 seconds.
- Add ground beef and cook until browned, about 6-8 minutes. Drain excess fat if needed.
- Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper.
- Add tomato sauce and water. Simmer on low for 5-7 minutes.
- Prepare toppings by slicing avocado, halving tomatoes, shredding lettuce, and chopping cilantro.
- Assemble bowls with roasted potatoes, taco beef, and desired toppings. Finish with lime juice and serve warm.
