Ingredients
2 lbs ground beef 1 large head cauliflower 1 zucchini 1 cup shredded cheddar cheese 6 eggs 1 tbsp olive oil 1 tsp salt 1/2 tsp black pepper
Instructions
1. Brown the ground beef and season with salt and pepper. 2. Steam or rice the cauliflower and let cool. 3. Slice zucchini thinly or spiralize. 4. Combine all ingredients in a baking dish. 5. Top with cheese and bake at 375°F for 25 minutes. 6. Cool completely, portion, and freeze. 7. Label with date, macros, and reheat instructions.
Notes
Use freezer-safe containers or bags. Cool fully before freezing. For variety, swap beef with shredded chicken or turkey.
