- 1 1/2 pounds beef sirloin or ribeye, thinly sliced
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 teaspoon paprika
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms (cremini or white), sliced
- 1 cup low-sodium beef broth
- 1 cup heavy cream
- 1/2 cup full-fat sour cream
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley, chopped (optional garnish)
- Cauliflower mash or zucchini noodles (for serving)
Instructions
- Pat beef slices dry and season with salt, pepper, and paprika.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear beef in a single layer for 1–2 minutes per side until browned. Work in batches if needed. Remove and set aside.
- Reduce heat to medium. Add chopped onion and cook 3–4 minutes until softened.
- Stir in garlic and cook 30 seconds until fragrant.
- Add sliced mushrooms and cook 5–6 minutes until golden and tender.
- Pour in beef broth and scrape up browned bits from the pan. Simmer 3–4 minutes.
- Stir in heavy cream, Dijon mustard, and thyme. Simmer about 5 minutes until slightly thickened.
- Reduce heat to low and stir in sour cream until smooth. Do not boil.
- Return beef to the skillet and simmer gently 2–3 minutes until warmed through.
- Taste and adjust seasoning. Garnish with parsley and serve over cauliflower mash or zucchini noodles.
Notes
- Simmer the sauce longer before adding sour cream if you prefer a thicker consistency.
- Ribeye offers extra richness, while sirloin is leaner.
- Greek yogurt can replace sour cream if desired.
- Store leftovers refrigerated up to 3 days and reheat gently over low heat.
