  • 1 1/2 pounds beef sirloin or ribeye, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms (cremini or white), sliced
  • 1 cup low-sodium beef broth
  • 1 cup heavy cream
  • 1/2 cup full-fat sour cream
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional garnish)
  • Cauliflower mash or zucchini noodles (for serving)

Instructions

  1. Pat beef slices dry and season with salt, pepper, and paprika.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear beef in a single layer for 1–2 minutes per side until browned. Work in batches if needed. Remove and set aside.
  4. Reduce heat to medium. Add chopped onion and cook 3–4 minutes until softened.
  5. Stir in garlic and cook 30 seconds until fragrant.
  6. Add sliced mushrooms and cook 5–6 minutes until golden and tender.
  7. Pour in beef broth and scrape up browned bits from the pan. Simmer 3–4 minutes.
  8. Stir in heavy cream, Dijon mustard, and thyme. Simmer about 5 minutes until slightly thickened.
  9. Reduce heat to low and stir in sour cream until smooth. Do not boil.
  10. Return beef to the skillet and simmer gently 2–3 minutes until warmed through.
  11. Taste and adjust seasoning. Garnish with parsley and serve over cauliflower mash or zucchini noodles.

Notes

  • Simmer the sauce longer before adding sour cream if you prefer a thicker consistency.
  • Ribeye offers extra richness, while sirloin is leaner.
  • Greek yogurt can replace sour cream if desired.
