Description

Hot Honey Chicken Bowls combine crispy, tender chicken tossed in a sweet and spicy hot honey glaze with rice and fresh vegetables for a balanced, comforting meal perfect for weeknights.

Ingredients

Scale
  • 2 large boneless, skinless chicken breasts (or 4 thighs), cut into bite-sized pieces
  • 1/2 cup buttermilk (or plain yogurt diluted with water)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper
  • Oil for frying or baking
  • 1/2 cup honey
  • 12 tablespoons hot sauce
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon butter
  • 1 teaspoon apple cider vinegar
  • 2 cups cooked rice
  • 1 cup steamed broccoli
  • 1 cup shredded carrots
  • 1 avocado, sliced
  • 1/2 cucumber, sliced
  • Optional: sesame seeds, chopped green onions

Instructions

1. In a bowl, mix buttermilk, garlic powder, paprika, salt, and pepper. Add chicken and marinate for at least 30 minutes.

2. Cook rice according to package instructions and prepare vegetables.

3. In a shallow dish, combine flour, cornstarch, chili powder, and cayenne.

4. Remove chicken from marinade and coat evenly in flour mixture.

5. Heat oil in a skillet and fry chicken until golden and crispy, about 4–5 minutes per side.

6. Alternatively, bake at 400°F for 20–25 minutes or air-fry until crispy.

7. In a saucepan, combine honey, hot sauce, red pepper flakes, butter, and vinegar. Heat until smooth.

8. Toss cooked chicken in the hot honey sauce until fully coated.

9. Assemble bowls with rice, chicken, and vegetables.

10. Garnish with sesame seeds and green onions and serve immediately.

Notes

  • Adjust spice level by increasing or reducing hot sauce and red pepper flakes.
  • Swap rice with quinoa, couscous, or cauliflower rice for variation.
  • Store leftovers in an airtight container for up to 3 days.
  • Reheat with a splash of water to keep chicken moist.
  • Add crunchy toppings like nuts or crispy onions for extra texture.
