Hearty Crockpot Sausage and Peppers is an easy summer dinner recipe made with chicken sausage, bell peppers, onions, and tomatoes. A simple, flavorful slow cooker meal perfect for busy days.
Ingredients
- 1 lb chicken sausage, sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 3 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes
- 1/2 cup chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon olive oil
- Salt and black pepper to taste
- Fresh parsley, chopped
Instructions
1. Heat olive oil in a skillet and brown sausage for 3-4 minutes.
2. Transfer sausage to the crockpot.
3. Add bell peppers, onion, and garlic.
4. Pour diced tomatoes and chicken broth over the mixture.
5. Season with oregano, basil, red pepper flakes, salt, and pepper.
6. Cover and cook on low for 4 hours or high for 2-3 hours.
7. Stir halfway through cooking.
8. Taste and adjust seasoning if needed.
9. Garnish with fresh parsley and serve hot.
Notes
- Use turkey sausage as an alternative.
- Adjust spice level with more or less red pepper flakes.
- Use fire-roasted tomatoes for deeper flavor.
- Store leftovers in the fridge for up to 3 days or freeze for later.
