Ingredients
- 1 pound boneless, skinless chicken breasts or thighs, sliced
- 2 medium zucchini, sliced
- 8 ounces mushrooms, halved
- 1 small onion, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons avocado oil or olive oil
- 3 tablespoons soy sauce or coconut aminos
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 2 green onions, sliced
- 1 tablespoon sesame seeds (optional)
Instructions
1. Heat 1 tablespoon oil in a skillet over medium-high heat
2. Season chicken and cook until golden (4–5 minutes), then remove
3. Add remaining oil, onion, garlic, and ginger; sauté 1 minute
4. Add mushrooms and cook 3 minutes until softened
5. Stir in zucchini and cook 2–3 minutes until crisp-tender
6. Return chicken to pan and mix well
7. Add soy sauce, vinegar, sesame oil, and red pepper flakes
8. Toss and cook 1–2 minutes until coated
9. Remove from heat and garnish with green onions and sesame seeds
10. Serve immediately
