Ingredients

  • 1/2 cup mashed banana
  • 1/2 cup Greek yogurt
  • 1/4 cup maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F and line a muffin tin.
  2. In one bowl, whisk together flours, baking powder, soda, cinnamon, and salt.
  3. In another bowl, mix banana, yogurt, maple syrup, egg, and vanilla.
  4. Combine wet and dry ingredients until just mixed.
  5. Fold in chocolate chips, if using.
  6. Divide batter evenly into muffin cups.
  7. Bake 18–22 minutes or until a toothpick comes out clean.
  8. Cool completely before storing.

Notes

Store in an airtight container for 3 days or freeze up to 3 months.
