Ingredients

  • 1 tablespoon olive oil
  • 250g lean sausage (chicken or turkey)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium potatoes, peeled and diced
  • 1 large carrot, sliced
  • 1 liter low-sodium chicken or vegetable broth
  • 2 cups fresh kale, chopped
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • 1/2 cup milk or light cream (optional)
  • Optional: white beans
  • Optional: lemon juice
  • Optional: grated Parmesan cheese

Instructions

1. Heat olive oil in a large pot over medium heat.

2. Add sausage and cook until browned, breaking it into pieces. Remove and set aside.

3. In the same pot, cook onion until soft and translucent.

4. Add garlic and cook briefly until fragrant.

5. Stir in potatoes and carrots, coating them in the flavors.

6. Pour in broth and bring to a boil, then reduce heat and simmer for 15 minutes.

7. Return sausage to the pot.

8. Add chopped kale and simmer for 5 minutes until wilted.

9. Stir in milk or light cream if desired.

10. Season with salt, pepper, thyme, and paprika.

11. Add a squeeze of lemon juice for brightness if desired.

12. Serve warm with grated Parmesan on top.
