Ingredients

  • 500g lean ground beef or turkey
  • 1 tablespoon olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 cup peas
  • 1 cup corn kernels
  • 1 tablespoon tomato paste
  • 1 cup low-sodium broth
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon whole wheat flour (optional)
  • 4 medium potatoes, peeled and chopped
  • 2 tablespoons Greek yogurt
  • 1 tablespoon olive oil or butter
  • 1/4 cup milk
  • Optional: spinach or kale
  • Optional: grated cheese

Instructions

1. Boil potatoes in salted water for 15–20 minutes until tender, then drain.

2. Mash potatoes with Greek yogurt, olive oil, milk, salt, and pepper until smooth.

3. Heat olive oil in a skillet and cook onion for 4–5 minutes until soft.

4. Add garlic and cook for 1 minute.

5. Add ground meat and cook until browned, breaking it apart.

6. Stir in carrots and cook for 5 minutes.

7. Add peas, corn, and optional greens.

8. Mix in tomato paste, thyme, paprika, salt, and pepper.

9. Pour in broth and simmer for 5–7 minutes.

10. Add flour if needed and stir until slightly thickened.

11. Preheat oven to 190°C (375°F).

12. Transfer filling to a baking dish and spread evenly.

13. Top with mashed potatoes and smooth the surface.

14. Add cheese if desired.

15. Bake for 20–25 minutes until golden.

16. Rest for 5 minutes before serving.

Notes

  • Swap meat with lentils or mushrooms for a vegetarian version.
  • Replace half the potatoes with cauliflower for a lighter option.
  • Store leftovers in the fridge for up to 4 days.
