- 3 medium zucchinis, sliced into thin rounds

For the sauce:
- 1 can (400g/14 oz) diced tomatoes
- 2 tbsp tomato paste
- 1 tsp dried oregano
- 1/2 tsp dried thyme
- Salt and pepper to taste
For the topping:
- 1 cup shredded mozzarella cheese
- 1/2 cup grated parmesan (or a mild alternative)
- 1/2 cup breadcrumbs (optional for extra crunch)
Directions:
- Preheat your oven to 190°C (375°F).
- In a large skillet, heat olive oil over medium heat. Sauté onions until soft, about 3 minutes.
- Add garlic and cook for 30 seconds, then add the ground beef. Cook until browned, breaking it apart.
- Stir in the diced tomatoes, tomato paste, oregano, thyme, salt, and pepper. Simmer for 5 minutes.
