- 1 tsp paprika
- 1/2 tsp chili powder (optional)
- Salt and pepper to taste
- 1/2 cup tomato sauce
For assembling:
- 6–8 medium flour tortillas
- 1 1/2 cups enchilada sauce (alcohol-free)
- 1 1/2 cups shredded cheddar or Mexican blend cheese
- Fresh cilantro or green onions, chopped (for garnish)
Directions:
- Preheat your oven to 180°C (350°F).
- In a skillet, heat oil over medium heat. Add onions and cook until soft.
- Stir in garlic, then add ground beef. Cook until browned and no longer pink.
- Season with cumin, paprika, chili powder, salt, and pepper. Add tomato sauce and stir well. Simmer for 5 minutes, then remove from heat.
- Spoon some beef mixture into each tortilla, roll them up, and place seam-side down in a greased baking dish.
