Ingredients:
For the pasta:
- 250g (about 9 oz) spaghetti or linguine
- Salt for boiling water
For the shrimp & sauce:
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 300g (about 10 oz) shrimp, peeled and deveined
- Salt and pepper to taste
- ½ teaspoon chili flakes (optional)
- Juice of ½ lemon
- ¼ cup chopped parsley
- ¼ cup grated Parmesan cheese (optional)
Directions:
- Cook the pasta in salted boiling water according to package instructions. Reserve ½ cup of pasta water, then drain and set aside.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add the garlic and sauté for 30 seconds until fragrant.
- Add the shrimp in a single layer. Season with salt, pepper, and chili flakes. Cook for 2–3 minutes on each side until pink and cooked through.
- Squeeze in lemon juice and stir in the remaining tablespoon of butter.
- Add the cooked pasta to the skillet and toss to combine. If needed, add reserved pasta water to loosen the sauce.
- Finish with chopped parsley and Parmesan cheese if desired. Serve hot!
