Ingredients:

For the pasta:

  • 250g (about 9 oz) spaghetti or linguine
  • Salt for boiling water

For the shrimp & sauce:

  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 300g (about 10 oz) shrimp, peeled and deveined
  • Salt and pepper to taste
  • ½ teaspoon chili flakes (optional)
  • Juice of ½ lemon
  • ¼ cup chopped parsley
  • ¼ cup grated Parmesan cheese (optional)

Directions:

  1. Cook the pasta in salted boiling water according to package instructions. Reserve ½ cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add the garlic and sauté for 30 seconds until fragrant.
  3. Add the shrimp in a single layer. Season with salt, pepper, and chili flakes. Cook for 2–3 minutes on each side until pink and cooked through.
  4. Squeeze in lemon juice and stir in the remaining tablespoon of butter.
  5. Add the cooked pasta to the skillet and toss to combine. If needed, add reserved pasta water to loosen the sauce.
  6. Finish with chopped parsley and Parmesan cheese if desired. Serve hot!
