Ingredients
- 2 grilled chicken breasts, sliced
- 4 cups mixed salad greens (spinach, arugula, or lettuce)
- 1 cup strawberries, sliced
- 1 cup mango or apple slices
- 1/2 cup blueberries or grapes
- 1/4 red onion, thinly sliced
- 1/4 cup chopped walnuts or almonds
- 3 tablespoons olive oil
- 1 tablespoon honey
- 1 tablespoon lemon juice or balsamic vinegar
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Instructions
1. Season chicken with olive oil, salt, and pepper, then grill until cooked and slightly charred.
2. Let the chicken rest, then slice into thin strips.
3. Wash and dry salad greens thoroughly.
4. Slice strawberries, mango or apple, and prepare blueberries or grapes.
5. Thinly slice red onion and chop nuts.
6. Whisk olive oil, honey, lemon juice or balsamic vinegar, Dijon mustard, salt, and pepper to make dressing.
7. Place greens in a large bowl or platter.
8. Add fruit evenly over the greens.
9. Top with sliced grilled chicken, onions, and nuts.
10. Drizzle dressing over the salad just before serving.
11. Toss gently or serve layered and enjoy.
