This Easy No-Bake Classic Fresh Strawberry Mousse is light, airy, and bursting with fresh strawberry flavor. Made with ripe strawberries and gently folded whipped cream, it’s an elegant yet simple dessert that requires no baking and minimal effort.

- 2 cups fresh strawberries, hulled and chopped
- 1/2 cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 teaspoon pure vanilla extract
- 1 cup heavy whipping cream, cold
- 1/4 cup powdered sugar
- 1 teaspoon unflavored gelatin
- 2 tablespoons cold water
- Fresh strawberry slices (optional garnish)
- Mint leaves (optional garnish)
- Whipped cream swirls (optional garnish)
Instructions
- Wash, hull, and chop the fresh strawberries. Blend until smooth and strain if desired.
- Add granulated sugar, lemon juice, and vanilla extract to the puree. Stir until dissolved.
- Sprinkle gelatin over cold water and let bloom for 5 minutes.
- Microwave bloomed gelatin for 10–15 seconds until dissolved. Do not boil.
- Slowly stir dissolved gelatin into strawberry mixture until fully combined.
- Beat cold heavy cream and powdered sugar until soft peaks form.
- Fold one-third of whipped cream into strawberry mixture, then gently fold in remaining cream.
- Spoon into serving glasses and refrigerate for 2–3 hours until set.
- Garnish with strawberry slices, mint, or whipped cream before serving.
Notes
- For a smoother texture, strain the strawberry puree.
- Do not overheat the gelatin.
- For a lighter version, substitute part of the cream with Greek yogurt.
- For dairy-free, use coconut cream instead of whipping cream.
- Store covered in refrigerator for up to 2 days.
