  • 1 can (20 oz) pineapple chunks, drained
  • 1/4 cup reserved pineapple juice
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons chopped green onions (optional)
  • 1 tablespoon sesame seeds (optional)
  • Steamed white or brown rice, for serving
  • Roasted broccoli, for serving
  • Simple cucumber salad, for serving

Instructions

1. Preheat the oven to 375°F (190°C) and lightly grease a medium baking dish.

2. Pat the chicken breasts dry with paper towels.

3. Place the chicken in the baking dish and drizzle with olive oil.

4. Season the chicken with garlic powder, onion powder, paprika, black pepper, and salt, then turn to coat both sides.

5. Spread the pineapple chunks around and over the chicken.

6. In a small bowl, whisk together the reserved pineapple juice, soy sauce, honey, brown sugar, and minced garlic.

7. In another small bowl, mix the cornstarch and water until smooth.

8. Stir the cornstarch slurry into the sauce mixture.

9. Pour the sauce evenly over the chicken and pineapple.

10. Bake uncovered for 30 to 35 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

11. Halfway through baking, spoon some sauce from the dish over the chicken.

12. Broil for 3 to 4 minutes at the end if you want a lightly caramelized top.

13. Remove from the oven and let the chicken rest for 5 minutes.

14. Garnish with green onions and sesame seeds, then serve with rice and your favorite sides.
