Ingredients
- 1 lb lean ground beef or ground turkey
- 2 cups whole wheat pasta (penne or rotini)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 can (14 oz) diced tomatoes, low sodium
- 1 cup tomato sauce
- 1 cup low-sodium beef or chicken broth
- 1 cup black beans, drained and rinsed
- 1 cup corn kernels
- 1 packet taco seasoning or homemade blend
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 cup shredded reduced-fat cheddar cheese
- 1/2 cup Greek yogurt
- 1 tablespoon olive oil
Instructions
1. Heat olive oil in a skillet and cook ground beef until browned
2. Add onion and cook until softened, then add garlic and cook briefly
3. Transfer mixture to crockpot
4. Add diced tomatoes, tomato sauce, broth, beans, corn, and seasonings
5. Stir well to combine ingredients
6. Cover and cook on LOW for 4โ5 hours or HIGH for 2โ3 hours
7. Add uncooked pasta 20โ30 minutes before serving and ensure it is submerged
8. Cook until pasta is tender
9. Reduce heat and stir in Greek yogurt and shredded cheese
10. Mix until creamy and well combined
11. Adjust seasoning and let sit briefly before serving
