Tender Crockpot Cheesesteak Sandwich Filling made with lean beef, peppers, and onions. A lighter, flavorful twist on a classic comfort food perfect for easy family meals and meal prep.
Ingredients
- 1.5 lbs lean beef sirloin or flank steak, thinly sliced
- 1 large onion, thinly sliced
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 3 cloves garlic, minced
- 1 cup low-sodium beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 6 slices provolone cheese (optional)
- Whole grain sandwich rolls or lettuce wraps
Instructions
1. Slice beef thinly for tenderness
2. Heat olive oil and lightly sear beef for 2โ3 minutes
3. Transfer beef to crockpot
4. Sautรฉ onions and peppers for 3โ4 minutes, then add garlic
5. Transfer vegetables to crockpot
6. Add beef broth, Worcestershire sauce, and seasonings
7. Stir everything to combine
8. Cook on LOW for 6โ7 hours or HIGH for 3โ4 hours
9. Adjust seasoning before serving
10. Serve on rolls with provolone or in lettuce wraps
