Instructions
- In a large bowl, mix buttermilk, salt, pepper, paprika, garlic powder, onion powder, and thyme. Add chicken and refrigerate at least 2 hours or overnight.
- Let chicken rest at room temperature for 20 minutes before cooking.
- Whisk flour, cornstarch, baking powder, cayenne, salt, and pepper in a separate bowl.
- Heat oil to 350°F (175°C) in a deep skillet.
- Dredge chicken in flour mixture, dip back into buttermilk, then coat again in flour.
- Fry chicken 6–8 minutes per side until golden brown and internal temperature reaches 165°F.
- Transfer to a wire rack and keep warm.
- Preheat waffle iron.
- Whisk flour, sugar, baking powder, and salt in a bowl.
- In another bowl, mix eggs, milk, melted butter, and vanilla.
- Combine wet and dry ingredients gently without overmixing.
- Cook waffles in waffle iron until golden brown.
- Serve waffles topped with crispy chicken and drizzle with maple syrup.
