Ingredients

  • 2 cups buttermilk
  • 1 teaspoon salt

  • 1/2 teaspoon dried thyme
  • 2 cups all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon cayenne pepper (optional)
  • Vegetable oil for frying
  • 2 cups all-purpose flour (for waffles)
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 3/4 cups milk
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Warm maple syrup for serving
  • Softened butter
  • Powdered sugar (optional)
  • Fresh berries (optional)

Instructions

  1. In a large bowl, mix buttermilk, salt, pepper, paprika, garlic powder, onion powder, and thyme. Add chicken and refrigerate at least 2 hours or overnight.
  2. Let chicken rest at room temperature for 20 minutes before cooking.
  3. Whisk flour, cornstarch, baking powder, cayenne, salt, and pepper in a separate bowl.
  4. Heat oil to 350°F (175°C) in a deep skillet.
  5. Dredge chicken in flour mixture, dip back into buttermilk, then coat again in flour.
  6. Fry chicken 6–8 minutes per side until golden brown and internal temperature reaches 165°F.
  7. Transfer to a wire rack and keep warm.
  8. Preheat waffle iron.
  9. Whisk flour, sugar, baking powder, and salt in a bowl.
  10. In another bowl, mix eggs, milk, melted butter, and vanilla.
  11. Combine wet and dry ingredients gently without overmixing.
  12. Cook waffles in waffle iron until golden brown.
  13. Serve waffles topped with crispy chicken and drizzle with maple syrup.

  • Add hot sauce to buttermilk for extra flavor.
  • Bone-in chicken works but requires longer cooking time.
