Description

Creamy Tuscan Melting Cabbage is a healthy comfort food made with roasted cabbage wedges topped with a creamy garlic Tuscan-inspired sauce. This simple clean eating recipe transforms cabbage into a tender, caramelized and flavorful vegetable dish.


Ingredients

  • 1 large green cabbage cut into wedges
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 2 tablespoons olive oil or butter
  • 4 cloves garlic minced
  • 1 small shallot finely chopped
  • 1/2 cup vegetable broth
  • 1/2 cup light cream or coconut cream
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon fresh lemon juice
  • 1/2 cup chopped sun-dried tomatoes optional
  • 1 cup fresh spinach leaves optional
  • 1/4 cup toasted pine nuts optional
  • Fresh parsley for garnish

Instructions

1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

2. Cut cabbage into thick wedges while keeping the core intact.

3. Place cabbage wedges on the baking sheet and drizzle with olive oil.

4. Mix salt, pepper, garlic powder, onion powder and smoked paprika and sprinkle evenly over cabbage.

5. Roast cabbage for 25 minutes.

6. Flip wedges carefully and roast another 15–20 minutes until caramelized and tender.

7. Heat olive oil or butter in a skillet over medium heat.

8. Cook chopped shallot for 2–3 minutes until softened.

9. Add minced garlic and cook for about 30 seconds until fragrant.

10. Pour in vegetable broth and simmer for 2 minutes.

11. Add cream, parmesan cheese, Italian seasoning and red pepper flakes.

12. Simmer sauce for 3–4 minutes until slightly thickened.

13. Stir in lemon juice and optional sun-dried tomatoes or spinach.

14. Place roasted cabbage on serving dish and spoon sauce over wedges.

15. Garnish with parsley, parmesan cheese and cracked black pepper before serving.

Notes

  • For a vegan version use coconut cream and nutritional yeast instead of parmesan cheese.
  • Add toasted pine nuts for extra Tuscan texture.
  • Leftovers can be stored in the refrigerator for up to 4 days.
