- 1 pound (450 g) large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 6 tablespoons unsalted butter (divided)
- 3 cloves garlic, minced
- 1 ½ cups heavy cream
- 1 cup freshly grated Parmesan cheese
- ½ teaspoon salt (divided)
- ¼ teaspoon black pepper
- ¼ teaspoon paprika (optional)
- Pinch of nutmeg (optional)
- 2 tablespoons chopped fresh parsley (for garnish)
- Extra Parmesan cheese (for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Reserve ½ cup pasta water, drain, and set aside.
- Pat shrimp dry and season with salt, pepper, and paprika.
- Heat olive oil and 2 tablespoons butter in a skillet over medium heat. Cook shrimp 2–3 minutes per side until pink and opaque. Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds until fragrant.
- Add remaining butter and heavy cream. Simmer gently for 3–4 minutes until slightly thickened.
- Stir in Parmesan cheese gradually until melted and smooth. Season with remaining salt, pepper, and nutmeg.
- Add drained pasta to the sauce and toss to coat. Add reserved pasta water if needed.
- Return shrimp to skillet and gently combine. Warm for 1–2 minutes.
- Garnish with parsley and extra Parmesan. Serve immediately.
