  • 12 ounces (340 g) fettuccine pasta
  • 1 pound (450 g) large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 6 tablespoons unsalted butter (divided)
  • 3 cloves garlic, minced
  • 1 ½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • ½ teaspoon salt (divided)
  • ¼ teaspoon black pepper
  • ¼ teaspoon paprika (optional)
  • Pinch of nutmeg (optional)
  • 2 tablespoons chopped fresh parsley (for garnish)
  • Extra Parmesan cheese (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Cook fettuccine until al dente. Reserve ½ cup pasta water, drain, and set aside.
  2. Pat shrimp dry and season with salt, pepper, and paprika.
  3. Heat olive oil and 2 tablespoons butter in a skillet over medium heat. Cook shrimp 2–3 minutes per side until pink and opaque. Remove and set aside.
  4. In the same skillet, sauté garlic for 30 seconds until fragrant.
  5. Add remaining butter and heavy cream. Simmer gently for 3–4 minutes until slightly thickened.
  6. Stir in Parmesan cheese gradually until melted and smooth. Season with remaining salt, pepper, and nutmeg.
  7. Add drained pasta to the sauce and toss to coat. Add reserved pasta water if needed.
  8. Return shrimp to skillet and gently combine. Warm for 1–2 minutes.
  9. Garnish with parsley and extra Parmesan. Serve immediately.

  • Use freshly grated Parmesan for the smoothest sauce.
  • Do not overcook shrimp to prevent rubbery texture.
  • For a lighter option, substitute half-and-half for part of the cream.
