Description
A comforting coconut curry chicken crockpot recipe made with tender chicken, creamy coconut milk, and warm spices. Perfect for easy slow cooker dinners.
Ingredients
- 1.5 kg boneless skinless chicken thighs or breasts
- 2 cups coconut milk
- 1 cup chicken broth
- 2 onions chopped
- 4 cloves garlic minced
- 1 tbsp fresh ginger grated
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp coriander
- 1/2 tsp black pepper
- Salt to taste
- 2 potatoes cubed
- 2 carrots sliced
- 1 red bell pepper chopped
- 1 tbsp tomato paste
- 1 tbsp lime juice
- Fresh cilantro
Instructions
1. Chop vegetables evenly and prepare all ingredients
2. Sauté onions for 3–4 minutes until soft
3. Add garlic and ginger and cook briefly
4. Place chicken into crockpot evenly
5. Add sautéed mixture on top
6. Mix coconut milk broth tomato paste and spices
7. Pour mixture over chicken
8. Add vegetables and stir gently
9. Cook on low for 6–7 hours or high for 3–4 hours
10. Adjust seasoning 30 minutes before serving
11. Stir in lime juice
12. Garnish with cilantro and serve hot
Notes
- Use chicken thighs for richer flavor
- Use full-fat coconut milk for creaminess
- Remove lid at end for thicker sauce
- Add fish sauce for deeper flavor
