Ingredients
For the Pie Crust:
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter (cold, cubed)
- 2–3 tablespoons ice water
- ¼ teaspoon salt
- 1 tablespoon sugar
For the Strawberry Filling:
- 5 cups fresh strawberries (hulled and halved)
- ¾ cup granulated sugar
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
For the Crumble Topping:
- ¾ cup all-purpose flour
- ½ cup brown sugar
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ½ cup unsalted butter (cold, cubed)
Instructions
1. In a bowl, mix flour, sugar, and salt. Add butter and blend until crumbly. Add ice water and form dough. Chill 30 minutes.
2. Roll out dough and place into a 9-inch pie dish. Chill again.
3. Mix strawberries, sugar, cornstarch, lemon juice, vanilla, and salt. Let sit 10 minutes.
4. Prepare crumble by mixing flour, brown sugar, cinnamon, salt, and butter until crumbly.
5. Preheat oven to 375°F (190°C).
6. Fill crust with strawberry mixture and top with crumble.
7. Bake for 45–55 minutes until golden and bubbly.
8. Cool for 2 hours before serving.
