Description
Crispy Chicken Fajita Rice Bowl is a quick, flavor-packed Mexican dinner made with juicy spiced chicken, sautéed peppers, and fluffy rice. Perfect for easy weeknight meals.
Ingredients
1 lb boneless, skinless chicken breasts (sliced)
2 tbsp olive oil
1 tsp chili powder
1 tsp cumin
1/2 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper
1 red bell pepper, sliced
1 green bell pepper, sliced
1 medium onion, sliced
2 cups cooked white rice
Juice of 1 lime
2 tbsp fresh cilantro (optional)
Avocado, salsa, or Greek yogurt (optional toppings)
Instructions
1. In a bowl, toss chicken with 1 tbsp olive oil and all spices.
2. Heat a skillet over medium-high heat and cook chicken for 4-5 minutes per side until golden and cooked through.
3. Remove chicken and set aside.
4. Add remaining olive oil to the skillet and sauté bell peppers and onion for 5-6 minutes.
5. Return chicken to skillet and squeeze lime juice over mixture, stirring well.
6. Warm cooked rice and divide into serving bowls.
7. Top rice with chicken and fajita vegetables.
8. Garnish with cilantro and optional toppings, then serve immediately.
Notes
Add jalapeño or cayenne for extra heat.
Use brown rice or cauliflower rice for variation.
Store leftovers in the fridge for up to 4 days.
