Description

Chicken Fajita Nachos are a bold and cheesy Tex-Mex dinner made with seasoned chicken, sautéed bell peppers and onions, crispy tortilla chips, and melted cheese. Perfect for quick dinners, game day snacks, or sharing with friends and family.

  • 2 boneless skinless chicken breasts, sliced into thin strips
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lime juice
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 large bag tortilla chips (1214 ounces)
  • 2 cups shredded Mexican-blend cheese
  • 1/2 cup shredded mozzarella (optional)
  • 1/2 cup sour cream (optional topping)
  • 1/2 cup guacamole (optional topping)
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup sliced jalapeños
  • 1/4 cup chopped fresh cilantro
  • 1 diced tomato
  • 1/2 cup black beans (optional)
  • 1/2 cup corn kernels (optional)

Instructions

  1. Slice chicken breasts into thin strips and place in a bowl.
  2. Add olive oil, lime juice, chili powder, paprika, cumin, garlic powder, onion powder, oregano, salt, and black pepper. Toss to coat.
  3. Let the chicken marinate for about 10 minutes while preparing vegetables.
  4. Slice bell peppers and onion into thin strips.
  5. Heat a large skillet over medium-high heat and cook the chicken for 4–5 minutes until browned and cooked through.
  6. Remove chicken from skillet and set aside.
  7. In the same skillet sauté peppers and onions for about 5 minutes until slightly tender.
  8. Return the cooked chicken to the skillet and mix with the vegetables.
  9. Preheat oven to 375°F (190°C).
  10. Spread tortilla chips on a baking sheet lined with parchment paper.
  11. Top chips with chicken fajita mixture and sprinkle shredded cheese over everything.
  12. Bake for 8–10 minutes until cheese melts and becomes bubbly.
  13. Remove from oven and add toppings like sour cream, guacamole, salsa, jalapeños, cilantro, tomatoes, beans, or corn.
  14. Serve immediately while cheese is hot and melted.

Notes

  • Marinate the chicken up to 1 hour for deeper flavor.
  • Boneless chicken thighs can be used for juicier meat.
  • Add jalapeños or extra chili powder for more heat.
  • Add fresh toppings after baking to keep the chips crispy.
  • The fajita chicken mixture can be prepared ahead and stored for up to 2 days.
