Ingredients:
For the Casserole:
- 3 cups cooked chicken, shredded or cubed
- 10 oz fresh spinach (or frozen, thawed & squeezed dry)
- 12 oz pasta (penne, rotini, or shells)
- 2 cups shredded mozzarella cheese
- 1 cup shredded Parmesan cheese
- 1 tbsp olive oil
- Salt & pepper, to taste
For the Homemade Alfredo Sauce:
- 4 tbsp butter
- 4 cloves garlic, minced
- 2 cups heavy cream
- 1 cup whole milk
- 1 cup grated Parmesan
- 1/2 tsp Italian seasoning
- 1/4 tsp nutmeg (optional but traditional)
- Salt & pepper to taste
For Topping:
- Extra mozzarella
- Fresh parsley, chopped

Step-by-Step Directions:
- Start by cooking your pasta according to package instructions until al dente. Drain and set aside.
- Preheat your oven to 375°F (190°C). Grease a large casserole dish with a little olive oil or butter.
- In a large saucepan, melt the butter over medium heat. Add garlic and sauté until fragrant—about 1 minute.
- Pour in the heavy cream and whole milk, stirring well. Let the mixture heat until it begins to gently simmer.
- Add the Parmesan cheese, Italian seasoning, nutmeg (if using), salt, and pepper. Continue stirring until the sauce thickens slightly and turns silky smooth. Remove from heat.
- In a big mixing bowl, combine the cooked pasta, chicken, spinach, and half the mozzarella. Pour in most of the Alfredo sauce and mix gently until everything is coated.
- Transfer the mixture to your prepared casserole dish. Pour the remaining Alfredo sauce evenly over the top.
- Sprinkle the remaining mozzarella and the shredded Parmesan generously over the casserole.
- Bake uncovered for 25–30 minutes, or until the top is golden, bubbly, and irresistible.
- Let rest for 5 minutes, then top with fresh parsley. Serve warm and enjoy creamy, cheesy comfort in every bite! 🍗🧀🔥
