Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese (optional)
  • Fresh chopped cilantro (optional garnish)
  • Sliced jalapeños (optional garnish)
  • Sour cream (optional topping)
  • Guacamole (optional topping)
  • Fresh lime wedges

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a large baking dish.
  2. Pat the chicken breasts dry with a paper towel and place them in the baking dish.
  3. Drizzle olive oil and lime juice over the chicken.
  4. In a small bowl mix chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, and black pepper.
  5. Sprinkle the seasoning evenly over the chicken and rub gently to coat.
  6. Arrange sliced bell peppers and onions around and over the chicken in the baking dish.
  7. Bake for 20–25 minutes until the chicken is nearly cooked through and vegetables begin to soften.
  8. Remove the dish from the oven and sprinkle cheddar and mozzarella cheese over the chicken and vegetables.
  9. Return to the oven and bake another 5–8 minutes until the cheese melts and becomes bubbly.
  10. Allow the chicken to rest for 5 minutes before serving.
  11. Garnish with cilantro, jalapeños, and serve with lime wedges, sour cream, or guacamole.

  • Marinate the chicken with seasoning, oil, and lime juice for up to 1 hour for deeper flavor.
  • Boneless chicken thighs can be used instead of chicken breasts.
  • Add crushed red pepper flakes for extra heat.
  • Serve with tortillas, rice, quinoa, or cauliflower rice.
  • Store leftovers in the refrigerator for up to 3 days.
