Description
Cheesy Baked Fajita Chicken is an easy healthy oven dinner made with juicy seasoned chicken breasts, colorful bell peppers, onions, and melted cheese. This simple Tex-Mex inspired meal is perfect for busy weeknights and family dinners.

- 4 boneless skinless chicken breasts
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 medium onion, sliced
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese (optional)
- Fresh chopped cilantro (optional garnish)
- Sliced jalapeños (optional garnish)
- Sour cream (optional topping)
- Guacamole (optional topping)
- Fresh lime wedges
Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a large baking dish.
- Pat the chicken breasts dry with a paper towel and place them in the baking dish.
- Drizzle olive oil and lime juice over the chicken.
- In a small bowl mix chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, and black pepper.
- Sprinkle the seasoning evenly over the chicken and rub gently to coat.
- Arrange sliced bell peppers and onions around and over the chicken in the baking dish.
- Bake for 20–25 minutes until the chicken is nearly cooked through and vegetables begin to soften.
- Remove the dish from the oven and sprinkle cheddar and mozzarella cheese over the chicken and vegetables.
- Return to the oven and bake another 5–8 minutes until the cheese melts and becomes bubbly.
- Allow the chicken to rest for 5 minutes before serving.
- Garnish with cilantro, jalapeños, and serve with lime wedges, sour cream, or guacamole.
Notes
- Marinate the chicken with seasoning, oil, and lime juice for up to 1 hour for deeper flavor.
- Boneless chicken thighs can be used instead of chicken breasts.
- Add crushed red pepper flakes for extra heat.
- Serve with tortillas, rice, quinoa, or cauliflower rice.
- Store leftovers in the refrigerator for up to 3 days.
