Description

This Caprese Chicken Skillet is a quick, one-pan meal with seared chicken, mozzarella, tomatoes, and basil—finished with a sweet balsamic drizzle.


Ingredients

Scale
  • 2 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 4 slices fresh mozzarella
  • Handful fresh basil leaves
  • 2 tbsp balsamic glaze

Instructions

  1. Pat chicken dry and season with salt, pepper, and garlic powder.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Sear chicken for 4–5 minutes per side, until golden and cooked through.
  4. Remove chicken; add tomatoes and garlic to same skillet.
  5. Cook tomatoes until blistered, about 5–7 minutes.
  6. Return chicken to skillet and top with mozzarella slices.
  7. Cover and cook 1–2 minutes until cheese melts.
  8. Turn off heat, add basil, and drizzle with balsamic glaze.

Notes

Use thighs instead of breasts if preferred.

To make it creamy, stir in a splash of cream with the tomatoes.

Low-carb? Serve with zoodles or cauliflower rice.
