Description
This Caprese Chicken Skillet is a quick, one-pan meal with seared chicken, mozzarella, tomatoes, and basil—finished with a sweet balsamic drizzle.

- 2 boneless skinless chicken breasts
- Salt and pepper, to taste
- 1 tsp garlic powder
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, minced
- 4 slices fresh mozzarella
- Handful fresh basil leaves
- 2 tbsp balsamic glaze
Instructions
- Pat chicken dry and season with salt, pepper, and garlic powder.
- Heat olive oil in a large skillet over medium-high heat.
- Sear chicken for 4–5 minutes per side, until golden and cooked through.
- Remove chicken; add tomatoes and garlic to same skillet.
- Cook tomatoes until blistered, about 5–7 minutes.
- Return chicken to skillet and top with mozzarella slices.
- Cover and cook 1–2 minutes until cheese melts.
- Turn off heat, add basil, and drizzle with balsamic glaze.
Notes
Use thighs instead of breasts if preferred.
To make it creamy, stir in a splash of cream with the tomatoes.
