Description

Blackstone BBQ Chicken is a juicy, flavorful griddle recipe featuring perfectly seasoned chicken cooked on a flat-top grill and finished with a caramelized barbecue glaze. This easy Blackstone recipe creates tender chicken with smoky, sweet, and savory flavors perfect for weeknight dinners, cookouts, or meal prep.

Ingredients

Scale
  • 2 pounds boneless skinless chicken breasts or chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon brown sugar
  • 3/4 cup barbecue sauce
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
  • Fresh chopped parsley (optional)
  • Sliced green onions (optional)

Instructions

1. Preheat the Blackstone griddle to medium heat and allow it to heat for about 5 minutes.

2. Pat the chicken dry with paper towels to remove excess moisture.

3. Drizzle olive oil over the chicken and rub it evenly on all sides.

4. In a small bowl combine smoked paprika, garlic powder, onion powder, chili powder, brown sugar, salt, and black pepper.

5. Season both sides of the chicken evenly with the seasoning mixture.

6. Add a small drizzle of oil to the hot griddle and spread it across the surface.

7. Place the seasoned chicken on the griddle leaving space between each piece.

8. Cook the chicken undisturbed for 5 to 6 minutes to develop a golden crust.

9. Flip the chicken and cook another 5 to 6 minutes on the other side.

10. In a small bowl mix barbecue sauce, honey, and apple cider vinegar to create the glaze.

11. Brush the BBQ glaze over the chicken once it is nearly cooked.

12. Flip the chicken again and brush the other side with sauce allowing it to caramelize for 1 to 2 minutes.

13. Check that the internal temperature reaches 165°F using a meat thermometer.

14. Remove the chicken from the griddle and let it rest for 5 minutes before serving.

Notes

  • Chicken thighs stay juicier than chicken breasts when cooked on a griddle.
  • Avoid adding BBQ sauce too early to prevent burning.
  • Use a smoky or hickory BBQ sauce for deeper flavor.
  • You can cook sliced onions or bell peppers alongside the chicken.
  • Leftover BBQ chicken can be stored in the refrigerator for up to 4 days.
