Description

BBQ Chicken Stuffed Sweet Potatoes Crockpot is a healthy summer dinner idea made with tender shredded BBQ chicken and soft sweet potatoes. Easy, flavorful, and perfect for busy days.


Ingredients

Scale
  • 4 medium sweet potatoes
  • 1 lb boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons fresh cilantro, chopped
  • 1/4 cup Greek yogurt or sour cream (optional)
  • 1 small red onion, chopped (optional)
  • 1 jalapeno, sliced (optional)

Instructions

1. Wash and pierce sweet potatoes with a fork.

2. Wrap potatoes in foil and place in the crockpot.

3. Season chicken with garlic powder, onion powder, paprika, salt, and pepper.

4. Place chicken on top of the sweet potatoes.

5. Pour BBQ sauce and chicken broth over the chicken.

6. Cover and cook on low for 6-8 hours or high for 3-4 hours.

7. Remove chicken and shred using two forks, then return to the crockpot.

8. Unwrap sweet potatoes and slice open lengthwise.

9. Fluff the inside of each potato with a fork.

10. Fill each potato with shredded BBQ chicken and sauce.

11. Sprinkle with cheese and cover briefly until melted.

12. Garnish with cilantro, onion, jalapeno, and yogurt if desired.

  • Use rotisserie chicken for a quicker version.
